The South Pacific Ocean is home to the stunning island country of New Zealand. Geographically, New Zealand is a sight to behold, and if you’ve ever seen movies like The Hobbit, The Lord of the Rings, or Hunt for the Wilderpeople, then you can probably imagine just how lush and exotic the country is. But New Zealand has far more to behold than just its rich landscape. I’ve read that the culture is quite the experience, and there is no shortage of attractions for tourists to enjoy. 

Attractions for the Movie Buff

The Hobbit Movie Set

It’s no secret that New Zealand is the home of The Lord of the Rings and The Hobbit film sets. These movies were filmed in Matama New Zealand, which is where you can still tour the Shire and enjoy a few other film-related activities such as:

If you’re into lesser-known comedic movies like me and have seen the movie Hunt for the Wilderpeople, then I suggest visiting the Waitakere Ranges. Washington D.C.: The Dream Destination

You may find many people asking, "If money weren't a problem where would you go?" and they'll probably tell you somewhere warm and tropical with a beach and a scenic view; But, I am not one of those people. I was always one of those kids who loved to watch history videos or documentaries in class, while all the other kids couldn't stand them. As far as I can remember I have always loved history and seeing artifacts from all types of periods. 

Being fortunate enough, I was able to visit Washington D.C. when I was thirteen years old, and let me tell you, 

I loved every single minute of the trip. So, you may find yourself asking, "Why write about somewhere you have already been?" and my answer to that is, Washington D.C. is so big and there is so much to do in a short period. I, unfortunately, didn't get to visit every site I wished I had. 

What To See In D.C.?

As mentioned previously, D.C. has very many sites, monuments, and museums you can visit. Let's start off with the possible museums we could visit, for free!

• National Gallary of Art
• National Air and Space Museums
• United States Holocaust Memorial Museum 
• National Museum of National History
• National Museum of American History

As I mentioned previously, All these museums are free of charge. The reason that all Smithsonian Museums and even their zoos are free is that "so you don't have to have any income level" to enjoy them -- Smithsonian Institution spokesperson Linda St. Thomas told the Hotsheet.[1]  For this reasoning, it makes me want to travel to Washington D.C. even more. I understand this assignment is about money not being an issue, but I would much rather visit a place or city where everyone can experience all these amazing artifacts and relics, free of charge.

Mentioning a few of the amazing museums you could see on your visit, let us move on to the eye-opening, spectacular monuments. Washington D.C. is home to more than 160 monuments, memorials, and Statues, but we are only going to mention a few of our favorite ones that we would like to see the most.

With having so many sites to see and visit and money not being an issue. Words wouldn't be able to describe how excited I would, because I would then be able to take all the time I need to see all 160 plus monuments, memorials, and Statues. History is one of my favorite subjects and this would truly be a dream destination for me.

Gluten-Free Homemade Fried Rice

One of my favorite foods growing up was Chinese food, specifically chicken fried rice. I would have eaten it for breakfast, lunch, and dinner if my parents would have let me. But when I was 19 my doctor told me I had a gluten intolerance, which unfortunately meant I could no longer eat Chinese food. But after a few years without it, I finally decided it was time to learn how to make a gluten-free version myself, and it turned out to be simpler than I anticipated.

Prep Time: 20 | Min Cook Time: 30 Minutes | Difficulty: Easy

Ingredients

Here is what you will need to have handy to make this dish:

• 2 cups of white rice
• 4 strips of bacon
• 1 Chicken breast
• 2 Large Eggs
• Half an onion
• 1 Carrot
• 1 Garlic clove
• Oil
• Salt and pepper
• Gluten soy sauce
• Red pepper flakes - optional

Cooking Instructions

If you make this meal for dinner, then it is ideal to make the rice in the morning of the same day, so it has time to chill in the fridge. But if you are short on time that morning, then you can cook the rice first and freeze it for twenty to thirty minutes while you prepare the rest of the meal.

1. Pour two cups of white rice into a medium-sized pot. Touch your index finger to the top of the rice pile, then fill the pot with water until it reaches your first knuckle
2. Cook rice over medium-high heat until boiling, then reduce to low heat and cover the pot.
3. Once the rice is fully cooked, leave it in the fridge for three to four hours if prepared in advance. If not prepared in advance, leave it in the freezer to chill until you have cooked the other elements.

Once you have prepared the rice and left it to chill, then you are ready to prepare the rest of the meal.

1. Wash and dry the carrot. Halve and peel the onion. Then mince both
2. Peel the garlic clove and mince it
3. Cut the chicken breast into half-inch strips that are 1-2 inches long.
4. In a large pan cook the chicken strips over medium-high heat, until they begin to brown or until cooked through. Once done remove from pan into a separate bowl.
5. Rinse the large pan you just used and cook the bacon strips over medium heat. Once crispy, set them aside and finely chop them.
6. Crack the two eggs into a bowl and whisk them. Then in the same large pan, you have been using, cook the eggs over medium heat. Once done, set aside in a separate bowl.
7. Take the chilled rice out of the fridge/freezer. Pour into the pan with a large drizzle of oil and begin cooking over medium-high heat.
8. Add a decent amount of gluten-free soy sauce, however little or much you want
9. After the rice has been cooking for about 10-15 minutes, then add the chicken, bacon, eggs, onion, carrots, and garlic to the rice. Mix well and continue to cook for a few more minutes until the rice is crispy, stirring occasionally
10. Remove from heat and season with salt, pepper, and red pepper flakes if desired.
11. Serve in a bowl, feeds 3-4 people.

This meal is delicious, and I love that I don't have to worry about feeling sick after eating it! Cooking with dietary restrictions was a learning curve, but with a bit of practice and determination, I've been able to enjoy my favorite foods without the pain that accompanies gluten.

Beautiful Japan, My Dream Destination

There are so many parts of the world that can be explored. But exploring can take a lot of planning, money, time, effort, and more. Depending on the situation, sometimes it is spontaneous. Often there are places we want to visit, but we are unable to. You probably can think of a place you've never been but always wanted to see, or maybe even become a citizen there. Our lives can be busy and challenging to make ends meet, but it is possible to make it your goal to visit the country you've been dreaming of.

My dream destination is Japan and exploring many of its beautiful cities. Japan has beautiful architecture, nature, stories, production, and citizens. Although Japan is crowded and busy, you'll notice the citizens there tend to have a peaceful presence.

Not to mention every city in Japan has something unique to offer. Cities such as Tokyo, Kyoto, Osaka, Hiroshima, Sapporo, Fukuoka, and more. In Japan, there are endless temples, museums, markets, castles, parks, and entertainment.

Japan has a beautiful balance between nature and man-made things. Both complement each other and are breathtaking. Not only you are exploring this gorgeous land, but it is very educational. The history, stories, language, and culture will always be fascinating, especially for outsiders. Going to Japan could be a culture shock to Americans, but a shock worth experiencing! 

Kumano Kodo Trail

Here is a list of activities to do in Japan:

• Hike the Kumano Kodo Trail
• Relax at an Osen (aka Japanese hot spring including a bathing facility)
• Go Izakaya Hopping (aka local bar hopping)
  
• Use the bullet train
• Visit beautiful shrines and temples
• View Mount Fuji

Despite the dark history Japan has, it became a very developed and intelligent country in our present time. Some of the things we know and love here in America come from Japan. Things such as Anime, Studio Ghilbi films, Culture meals, Designs, language, and much more.

 Not According To Plan

Four years ago, as a senior in high school, I faced a debilitating injury that forever changed the course of my life. I was ranked fourth in Wyoming as a competitive pole vaulter. I was also an Airman in the Air National Guard. On a rainy day in April of 2017, I ran a 5k with my unit to raise awareness for domestic abuse. Before I crossed the finish line, I managed to tear a tendon in my leg, ankle, and foot. 

Initially, the pain was manageable. It felt no worse than a sprain. But while running laps a couple of days later, I fell to the ground in excruciating pain. Tears streamed down my face as a stabbing pain shot through my leg. The final track season of my high school career ended that day, but my father would tell me: "when God closes one door, He often opens another." So even though I couldn't continue vaulting, I determined that I could wait patiently for another door to open.

I spent the next few months tediously caring for my injury until the doctor determined that I needed surgery to reconstruct the tendon. The news was discouraging, but I wanted to do whatever it took to get back to duty. After recovery from surgery was over, my pain remained, and my doctor declared it a chronic injury. At the time, there was nothing more discouraging to me than hearing my doctor tell me, "you'll likely never run pain-free again." The continuous nature of my injury determined me to be unfit for duty, so I was discharged from the military. 

My plan for my life fell apart that day I injured my leg, I had to re-evaluate everything that I wanted to do. It took me time to rebuild my goals and discover what else I could be passionate about. It certainly wasn't a simple task, but it was worth the time it took to find the other door that God opened after closing so many.

Ultimately, I enjoy where I am today much more than I enjoyed where I was going back then. I never would have gotten here if I had never got injured. So while the injury and the months after were difficult at the time, it taught me some important life lessons. When life isn't going according to plan, I encourage you to be patient while searching for other opportunities. Sometimes the door that opens when every other door is closing ends up being the best one for us to walk through.
