Simple, Healthy Chicken and Vegetables in 15 Minutes
In a busy family, the balance of time, togetherness, taste, and nutrition at meals can be tricky. Too often, one of those things is sacrificed. This highly adaptable, 15-minute meal meant that even on our busiest day, it was still possible to keep them all in balance.
The ingredients are basic and can be modified for preference or availability. We most commonly used cherry tomatoes, zucchini, broccoli, onion, bell peppers, and chicken. Any vegetable that will hold up to roasting can be used. Olive oil is sprinkled over the top to hold the seasonings.
Seasonings
These can be mixed and stored ahead:
Salt
Pepper
Italian seasoning
Paprika
Instructions
Preheat oven to 500 degrees F
Chop chicken and vegetables into large pieces
Place the chicken and vegetables in a cooking stone
Add the olive oil and seasonings
Toss to combine
Bake 15 minutes
Serve with rice or a salad
